Sweet Potato Hashbrowns and Eggs
Ingredients 
1 cup shredded sweet potato 2 eggs
1⁄2 T. coconut
oil 
Instructions 
1. Peel and shred sweet potato.
2. Melt coconut oil
in pan and add sweet potato, salt and pepper. Cook and stir 
occasionally until sweet potatoes are soft &
golden.
3. Crack eggs on top of sweet potato. Cover pan with lid and cook until
eggs are 
cooked. 
Notes
Other vegetables can be added to
the sweet potato (Peppers, onion, spinach, etc.)
